EVO is built around one distinctive idea: a circular flattop cooking surface that turns cooking into something you do with people, not with your back to them. It is the appliance that makes the cook the center of the gathering rather than the person who steps away from it.
The form is the function. A continuous round griddle, heated evenly across the surface, invites a whole meal cooked in front of guests, from a morning breakfast to a full dinner service, indoors or out.

EVO is designed and manufactured in the United States, at the company's home in Smithville, Tennessee, and is part of the Middleby Corporation, a group with deep roots in professional and commercial cooking equipment. The residential surfaces carry that commercial lineage into the home kitchen.
What the engineering is really about is even heat distribution across the flattop, so the whole surface cooks the way the center does. That is a thing you cannot take on trust from a photograph, which is exactly why EVO belongs on a floor where it can be running.
